Giant latke with smoked salmon

  1. Preheat oven to 475°F.
  2. Place potatoes in a clean kitchen towel. Wring out as much water as possible.
  3. In a bowl, combine potatoes, yellow onion and one egg. Season with salt and pepper.
  4. Add olive oil to frying pan. Add potato mixture and spread evenly. Drizzle with olive oil.
  5. Bake for 30-35 minutes.
  6. Bring a pan of water to a boil. Add the two eggs and cook for 7-8 minutes. Remove from the pan and plunge into a bowl of iced water before removing the shells.
  7. In a bowl, combine the red wine vinegar, water and sugar. Add a pinch of salt and mix well. Heat in microwave for approx. 1 minute. Add the red onions and marinate for a few minutes.
  8. Garnish the latke with arugula, smoked salmon, pickled onions, eggs, crème fraîche and dill. Serve with a drizzle of olive oil and lemon wedges.
