Mustard and apple pork roast

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix mustard, olive oil, herbs, fleur de sel and pepper.
  3. Brush the roast with this mixture, then place it on the rack of a roasting pan on a bed of onions. Bake for 1 hour 15 to 1 hour 40 minutes, or until a kitchen thermometer inserted in the center of the roast registers 158°F (70°C). After 45 minutes, add the potatoes, onions and carrots cut around the roast. 15 minutes later, add the apples.
  4. Place the pork roast on a cutting board and cover with aluminum foil for 10 minutes before slicing. Serve with vegetables.
