Ingredients
- 75 ml (⅓ cup) olive oil mustard, roasted garlic and white balsamic vinegar
- 30 ml (2 tbsp.) green olive oil
- 5 ml (1 tsp.) fresh thyme
- 5 ml (1 tsp.) dried or fresh sage
- 2,5 ml (½ tsp.) fleur de sel
- 1,25 ml (¼ tsp.) freshly ground peppercorns
- 1 boneless pork loin roast (approx. 2lb /1 kg)
- 2 apples, cubed
- 3 potatoes, cubed
- 2 onions, sliced into rings
- 2 carrots, cubed
Steps
- Preheat the oven to 350°F (175°C).
- In a bowl, mix mustard, olive oil, herbs, fleur de sel and pepper.
- Brush the roast with this mixture, then place it on the rack of a roasting pan on a bed of onions. Bake for 1 hour 15 to 1 hour 40 minutes, or until a kitchen thermometer inserted in the center of the roast registers 158°F (70°C). After 45 minutes, add the potatoes, onions and carrots cut around the roast. 15 minutes later, add the apples.
- Place the pork roast on a cutting board and cover with aluminum foil for 10 minutes before slicing. Serve with vegetables.
