Greek style potatoes

Serves : 4 to 6

1 kg (2.2 lbs) potatoes, in wedges (keep the peel if not too thick)
6 garlic cloves, in halves
1 large Vidalia onion, in wedges
5 ml (1 teaspoon) mountain oregano*
60 ml (1/4 cup) extra virgin olive oil
Juice of 1/2 lemon
Sea salt
Fresh ground black pepper
85 ml (1/3 cup) chicken broth


— Preheat oven to 200 ˚C (400 ˚F).

— In a baking dish, combine all ingredients.

— Bake for approximately 50 minutes, tossing from time to time.

NOTE — * Mountain oregano (from the Greek words «oros» which means mountain and «ganos» which means joy) has multiple tonic, curative and aromatic properties. It is sold dry on stems, and can be found in specialty stores.
