Effie’s tomato coulis

1 can 796 ml (28 fl oz)
crushed tomatoes (store-bought or homemade)
250 ml (1 cup) of water
5 to 6 garlic cloves, finely chopped
125 ml (1/2 cup) extra virgin olive oil
10 ml (2 teaspoons) sugar (optional)
5 ml (1 teaspoon) sea salt
Fresh ground black pepper
— In a large pot, combine all ingredients. On medium heat, cook for approximately 30 minutes or until all moisture has evaporated, and that there are only oil and tomatoes left. Whisk gently.
TRICK — You will enjoy the coulis hot or at room temperature. Serve it on pasta with Parmesan cheese, with fried calamari, grilled eggplants; use it as a sauce for your pizza. Take your pick…
NOTE — During tomato season when they are at their best, try grating some to prepare the coulis.
